Bilbao remade itself around one titanium building, but the pintxos bars of the old town are the real reason to stay two nights instead of a rushed afternoon.

The Guggenheim is worth every superlative thrown at it, but don't just photograph the outside and leave — the rotating contemporary shows inside are genuinely good, and the riverside terrace with Jeff Koons's flower-covered Puppy is a fine place to sit before you've even bought a ticket. Cross the Puente de la Salve and you'll see the museum's titanium panels change colour as the light shifts, a detail most day-trippers miss because they've already moved on.

Casco Viejo, the old town, is where Bilbao actually feeds you. Work Calle Somera and Calle Barrenkale in a loose pintxos crawl — order at the bar, keep your toothpicks as a running tab, and don't be afraid to ask for the kitchen's hot pintxos rather than the ones sitting out on the counter. Gilda, the original pintxo of anchovy, olive, and guindilla pepper, was invented here and is still the benchmark against which everything else gets judged.

On your second day, take the little green Bizkaia coastal train out to Getxo or Mundaka, where a famous left-hand surf break curls into the mouth of the Urdaibai estuary. It's forty minutes from the city centre and feels like a different country — cider houses, cliffside paths, and none of the museum crowds. Bilbao's compact enough that two focused days cover the essentials without ever feeling rushed.
